CLOVER

One of the mildest honeys we produce, Clover, gets its name from yellow and white sweet clover found in the high altitude of the San Luis Valley in Southern Colorado and Northern New Mexico. This is our most popular honey among people that are use to light honey. Unlike our other honey we are able to produce clover honey fairly consistently, although some color variation is normal from year to year.

Star Thistle/ Clover

This honey was made right near my house. Star Thistle is a small flower that grows on a very hardy plant. It is also known as knap weed. (not such a great marketing name) The honey is orange in color and very very fragrant. Your nose will stand up and take notice as soon as you open the jar. As the name implys there is a fair amount of light clover honey mixed in since both the flowers were blooming at the same time and the bees aren’t as particular as us humans. This is a nice light honey with a twist in taste for those of you who are tired of the mellowness of clover but still like the lighter honey.

TAMERISK 2009! 2009!

Tamarisk, also known as Salt Cedar is a pine like tree that grows all along the Rio Grande river from Northern New Mexico to the Gulf of Mexico. The tree has gained a reputation of a large water user and New Mexico currently has a program to try and eradicate this tree through removal. As a result we have been making less and less honey every year. This is my favorite honey, it is the Irish Stout of the honey world, dark, strong and very unusual. If you are a fan of Buckwheat honey or Tuepelo honey this is right up your alley!

RODEO MESQUITE Creamed Honey

NEW LABEL! We have changed this label completely from the typical Simply Honey Label. It is sold as Rodeo Mesquite, since that is the secret to its texture and flavor.
Creamed honey sometimes called whipped or spun honey, is honey that is naturally granulated under controlled circumstances. We use Mesquite honey to start the process and give it a nice smooth consistancy. This white honey will stay soft in the jar forever and won’t run off of your toast! keep it cool, if you warm it it will turn into regular liquid honey.

Cut Comb Honey

Ah yes. Comb honey, the purest, simplest form of honey. It really is the way honey should be eaten. Unfortunately many people don’t enjoy the bees wax of which the comb is made. Bees wax is, for all practical purposes, a plant oil. Just like sunflower or olive oil. The wax is not only fully digestable but a great source of roughage. It aids in digestion of food and many people eat comb honey for regularity
